Serves 5

Ingredients

  • 5 (4 oz.) chicken or turkey breasts
  • 3 plum tomatoes
  • 3 ounces red onion, diced
  • 3 ounces green pepper, diced
  • 1/2 ounces jalapeño pepper, diced
  • 1/2 ounces basil, chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons lime juice

Directions

  • Season chicken and grill or pan sear.
  • Slice plum tomatoes 1/2-inch thick.
  • Grill tomatoes on a hot grill until they are lightly charred.
  • Remove and cool.
  • Mix all ingredients together.
