Ingredients
- 5 (4 oz.) chicken or turkey breasts
- 3 plum tomatoes
- 3 ounces red onion, diced
- 3 ounces green pepper, diced
- 1/2 ounces jalapeño pepper, diced
- 1/2 ounces basil, chopped
- 1/4 cup balsamic vinegar
- 2 tablespoons lime juice
Directions
- Season chicken and grill or pan sear.
- Slice plum tomatoes 1/2-inch thick.
- Grill tomatoes on a hot grill until they are lightly charred.
- Remove and cool.
- Mix all ingredients together.
