Ingredients
- 1 pound sweet potatoes, peeled
- 1/2 cup vegetable stock, no added salt
- 1/4 cup & 2 tablespoons Smart Balance
Directions
- Boil sweet potatoes until tender.
- Mash the potatoes.
- Add vegetable stock to desired consistency.
- Melt Smart Balance.
- Whip potatoes.
- Add melted Smart Balance.
