Grilled Chicken Breast with Black Bean and Roasted Corn Salsa

  • 5 (6 oz) chili rubbed chicken or turkey breast
  • 5 oz black beans
  • 5 oz roasted corn
  • 3 oz red onion, chopped
  • 2 oz red pepper, diced
  • ½ tsp ground cumin
  • 3 fl oz lime juice
  • ½ oz cilantro, chopped
  • 1 avocado, sliced


  • Prep all ingredients and mix.
  • Garnish with sliced avocado.

Nutritional information per serving: 407 calories, 19 g carbohydrates, 57 g protein, 11 g total fat, 2 g saturated fat, 132 mg sodium and 68 mg cholesterol.
