Salmon with Watermelon Cucumber Salsa

Ingredients:

  • 5 skinless salmon fillets (6 oz ea)
  • 10 oz fresh watermelon, diced
  • 5 oz cucumber, diced
  • 3 oz red onion, diced
  • 2 oz red pepper, diced
  • 1/5 jalapeño pepper, sliced
  • 3 fl oz lime juice
  • ½ oz cilantro, chopped

Directions:

  • Grill or pan sear salmon 
  • Prep all ingredients and mix

Per serving: 273 calories, 35 g protein, 7g carbohydrates, 11 g fat, 2 g saturated fat, 81 mg sodium and 94 mg cholesterol.
